So the holidays are finally over and my move has been completed to the adirondacks. I am finally getting settled in. Thanks to the holidays, moving and me trying to find a job, I’m on a budget. Luckily growing up and being a college student I learned how to be resourceful in a pantry. What does spaghetti + eggs equal? Spaghetti frittatas! Or as my Beau likes to call it Nelly Frittatas. It is simple and delicious and filling and cheap cheap cheap. It’s also extremely versatile, you truly have a blank canvas with this dish and you can create some beautiful dishes for any meal of the day.
10 eggs
1 box of spaghetti
1 jar of tomato sauce
Parmesan cheese
Salt and pepper
Preheat oven to 350 degrees
Mix eggs and pour into large nonstick or greased sautee pan, preferably one that goes from stove top to oven. In a mixing bowl combine pasta and sauce then place in egg mixture. Sprinkle salt and pepper and parmesan cheese then either transfer into a pie pan or place oven safe sautee pan in the oven for 10 minutes or until the top is golden brown. Let sit and serve with pasta sauce drizzled on top and extra parmesan. This is the most basic version you can add anything you want in the mixture and create easy quick variations that better suit your palates.
